La Chiquita Tortilla is committed to food safety and product quality. This commitment is evident through Good Manufacturing Practices and the implementation of HACCP (Hazard Analysis Critical Control Points) based food safety programs. Quality Systems are also an integral part of our management programs and are closely integrated with Food Safety programs. Integrated Food Safety Programs give assurance that we are able to provide safe product to our customers and consumers as well as delivering consistently high quality products and services.

HACCP
Hazard Analysis Critical Control Point (HACCP) plan is a management system in which food safety is addressed through the analysis and control of biological, chemical, and physical hazards from raw material production, procurement and handling, to manufacturing, distribution and consumption of the finished product. La Chiquita is firmly committed to HACCP and its successful implementation. Our HACCP is in full compliance with the National Advisory Committee for the Microbiological Criteria for Foods (NACMCF).
PRODUCT INFORMATION
La Chiquita corn and flour tortillas are 100% Authentic Mexican Products of the highest quality. Corn and flour tortillas are the original bread of the Mexican Indians. In addition, they are delicious because they are made from all natural ingredients.
We start with the highest quality Corn and Corn Flour (Masa harina). The corn is soaked, then washed to remove the skin and cooked. The cleaning process gives the corn tortillas brighter color and better flavor that is the authentic Mexican taste. After the corn has been cooked it is stone ground to fine corn dough (Masa). The fine corn masa has a lighter taste and appearance, which is similar to the Texas/California style of tortilla. Both Corn and Corn Flour (Masa harina) Tortillas are cut and weighed to the customer’s specifications. Tortillas are oven baked.
From corn and corn flour tortillas we produce our Unfried Hand Cut Chip. The hand cutting of the chips gives the product the authentic appearance. By hand cutting and tumbling the tortillas, we also minimize sticking of the chips for better frying. We are also able to customize the style of cut at your request.
La Chiquita makes two different types of quality flour tortillas: Hand Stretched and Pressed. The hand stretched tortillas are made thin and flaky. This product is especially made for any of your friable flour tortilla needs, i.e. taco salad bowls and chimichangas. The pressed flour tortillas are thick and pliable. Perfect for burritos, fajitas and so much more! La Chiquita’s tortillas resist sticking and tearing and are easy to fold, roll and cut.
La Chiquita’s corn and pressed products are Kosher approved.
Products meet all of the strict kosher guidelines and are certified animal free for use by Jews, Muslims, vegetarians and health conscious customers.

Main Ingredients: White corn, or yellow corn, water and a trace of lime
Pressed flour tortillas
Main Ingredients: Enriched bleached flour, water, and vegetable shortening
Hand stretched flour tortillas
Main Ingredients: Enriched bleached flour, water, and vegetable oil

Both flour and corn tortilla products will dry out if the plastic bag is left open for more than forty-five (45) minutes.
AMBIENT / REFRIGERATED PRODUCTS - ready for use
FROZEN PRODUCT - For best results remove from the freezer the night before using and place in a refrigerator to thaw. Keep thawed tortillas refrigerated until use. Any remaining tortillas should be kept in a plastic bag and stored in the refrigerator for future use.
CHIPS - Fry the corn tortilla wedges until crisp (Oil temp ~350-375 degrees F). Remove from fryer and drain. While warm, salt to taste.
